Fruit + Chocolate = Winning Combination
There is something so magical about fruit and chocolate! Separately, they are amazing, but when you put them together is like POW party in the mouth! Next level action right here!
Our Raw Choc Strawberry slice was such a hit, so we knew blueberries and chocolate would be just as amazing! This tart combines a crust of nutty amazingness with a to die for chocolate ganache, and the sweet juiciness of blueberries!
Blueberry heaven
Oh my! The blueberry season so far is out of this world!! They are so fresh, juicy and sweet, but still have that subtle tartness that makes them taste so special. Plus they are so cheap right now, so we can enjoy them a bit more often!
And Blueberries are incredibly good for you! They are nutrient dense morsels of goodness! They are full of antioxidants, they can help lower your blood pressure, and a full of vitamins such as Vitamin C & Vitamin K.
All about chocolate
So let’s talk about our Healthy Chocolate Blueberry Tart. It’s a little bit different to what we have created in the past as we are using store bought dark chocolate. Which might lead you to say “hang on – isn’t chocolate on the food that doesn’t love us back list?” .
If you are talking milk or white chocolate – then yes you’re right. But if you buy quality dark chocolate with a high cacao content, then it is actually quite nutritious. We aren’t recommending you eat it every day, but a slice or two of this tart will be filled with enough goodness to satiate you and satisfy any sweet cravings!

- 1 cup raw cashews
- 2 cups shredded coconut
- 2 tbs coconut oil
- 1 tbs honey
- 1 tbs cacao
- 1/2 cup blueberries
- 1 tsp honey
- 100g of good quality dark chocolate, chopped
- 1 cup coconut milk
- 1 tbs honey
- Line a tart pan with cling wrap (we used a 260mm by 25mm with a removable base)
- Using a food processor, blend all of the base ingredients together
- Press evenly into the prepared tart pan. Be sure to spread the base mixture all the way up the sides so the entire base and sides are covered
- Pop in the fridge to set while you work on the filling
- Place the blueberries and honey in a small saucepan on medium heat
- Bring to the boil, and then reduce the heat back down to low until the blueberries are soft. This took approx 5 minutes
- Remove from the heat and mash the blueberries with a fork or use a stick blender to puree
- Set aside
- Place chopped chocolate in a bowl
- In a small saucepan, bring the coconut milk and honey to a boil, stirring gently
- Remove from the heat and pour the coconut mixture over the chocolate
- Stir the chocolate and coconut milk mixture until smooth and creamy. The chocolate should melt immediate from the heat of the coconut milk mixture
- Stir in the pureed blueberries
- Take the base out of the fridge
- Pour the filling into the prepared base
- Garnish with fresh blueberries
- Place the tart in the fridge to cool and set. We allowed a minimum of 2 hours
- Depending on your sweet tooth, you can increase or decrease the levels of sweetener
- You can switch the honey to maple syrup or rice malt syrup
