The countdown to Christmas is on!
It’s the week before Christmas and it can feel like we are all in a hurry: to finalise their shopping, wrapping and hiding presents in time for Christmas day, and rushing from event to event.
The reason for the season
While we know it’s easy to get caught up in the craziness and appreciate life, we truly believe this time of year is about reflection and giving.
It’s a great time to reflect on the year that was, how much you have grown, what you want to improve on in the year to come, and what you are grateful for in life.
It’s also a great time to focus on sharing joy with your loved ones, whether it be via presents, experiences or simply giving the gift of your time. After all, the best present is your presence!
Getting into the spirit of things
In all of the hectic, crazy times, it’s important to find ways to enjoy the festive season, without all the overwhelm.
For us, one of those methods is baking! We like to get into the festive season by pumping our favourite Christmas carols (check out our Spotify playlist here), and filling our apartment with delicious Christmas baking smells. It’s a great safe haven amidst all the holiday season chaos.
What have we been baking?
This year we discovered a new Christmas love – Healthy Fruit Mince Pies! They are a super special once a year only treat, and are perfect to share with your family! They are loaded with natural sugar and fruits, so it’s best to have only one or two. They taste so damn amazing though – that’s why we have to take to them to an event and share them.
Better still, why not bake these and eat them with your loved ones and watch your favourite Christmas movie(s). For us, we watch ‘It’s a Wonderful Life’ and ‘Love Actually’ every year!

- Fruit Mince
- 1 apple (grated)
- 2 oranges (zest and juice)
- 6 medijool dates (pitted)
- 1/4 cup dried apricots
- 1/4 dried rasins
- 1/4 cup pineapple (chopped)
- 2 tbs honey
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1/2 tsp ginger
- Pie Crust Dough
- 2 cups almond meal
- 2 eggs
- 3 tbs coconut oil
- 1 tbs honey
- pinch salt
- 1 egg white beaten
- Fruit Mince
- Place all ingredients in a small saucepan on low heat.
- Leave to simmer for 25 minutes, stirring occasionally. Do not allow the mixture to boil.
- Remove from heat, allow to cool.
- Pie Crust Dough
- Mix the almond meal and salt together in a large mixing bowl Add the eggs, honey, vanilla and coconut oil
- Mix until a sticky dough forms
- Pop the dough into the fridge for 1 hour
- Take the dough out of the fridge and place between two sheets of baking paper.
- Use a rolling pin to roll the dough out to approx.5mm.
- Peel the top layer of the baking paper off
- Using a circle shaped cookie cutter, cut into circles and place the dough into your muffin tray. Press down and shape into each muffin pan, pressing the dough higher on the sides
- Poke holes into the dough using a fork to stop it the dough from rising
- Place into the oven and bake for 8 minutes or until slightly golden brown.
- Remove from the oven and spoon the fruit mince into each muffin. Flatten with the back of the spoon.
- Use a star cookie cutter to cut out star shapes with the remaining pastry. Place the star over the muffin
- Brush the egg white over the star pastry
- Place back into the oven for another 15 minutes.
- Remove and allow to cool before serving
