The Holiday season is upon us
Today, we are sharing one of our delectable dessert recipes from our new E-book Happy Healthy Holidays – Paleo Gingerbread Cookies!
When we were coming up with recipe ideas for this book, Gingerbread was top of the list. It’s Matt’s absolute favourite, so of course we had to create a healthy alternative!
We reckon they taste even better than the original! A healthy, gluten free and refined sugar free version of this Christmas classic.
What makes them taste so amazing?
It comes down to sweetness, spices and texture! The sweetness comes from the molasses and honey, we use the delicious spices of ginger, clove, cinnamon, and nutmeg. So the cookies are spicy, yet sweet, with that delicious distinct gingerbread taste. We love how the cookies are firm on the outside, but soft and chewy on the inside.

On the plus side, molasses contains a number of minerals such as calcium magnesium potassium, iron, copper and more! So you really can call these Paleo Gingerbread cookies healthy!

Here’s what you’ll get

- 1 1/2 cup almond meal
- 3/4 cup arrowroot
- 3 tbs coconut oil
- 2 tbs molasses
- 1 tbs honey
- 1 tsp vanilla powder
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- pinch of salt
- Using a food processor, blend the dry ingredients together
- Add the remaining ingredients and blend until a sticky dough forms
- Place the dough in the refrigerator for 30 minutes
- Preheat the oven to 180 degrees and line a baking tray with baking paper
- Coat your hands in arrowroot powder, and roll the dough out into small round balls.
- Place the balls onto the baking tray, and using the back of the fork, make an indent press the cookies down flat
- Bake for 15 minutes or until cooked.
- Allow to fully cool before eating.
- Store in an airtight container
- You can use a cookie cutter to make into fun shapes if you like!
