We bought a waffle maker!
Since we changed our lifestyle to a wholefoods inspired diet, we have found we don’t really need many food appliances – other than our blender and food processor. So after throwing out our toaster, our sandwich press and our jaffle maker … we recently caved and purchased a waffle maker!
Why?
We had been to a local cafe Henleys Wholefoods and had the most amazing sweet potato breakfast waffles and it got us thinking … if we had a waffle maker what delish healthy concoctions could we come up with? We started dreaming of cacao waffles, berry waffles, savoury waffles … and these pumpkin pie spice waffles! Oh so many glorious and scrumptious options!
Our Healthy Spiced Breakfast Muffins has been hugely popular, so we can tell its not only Americans who dig the pumpkin spice flavours! Us Aussies love it too! And how could you not – cinnamon, nutmeg, cloves and ginger are the yummiest combo of spices! We like to add a dash of vanilla for an extra flavour hit!
Waffles are absolutely perfect for a weekend brunch. The best part about making waffles is you get to have a lot of fun with the toppings! We kept it simple to allow the pumpkin spice flavours to shine through, but the waffle is so versatile you can top it as you see fit! We loved our toppings of coconut yoghurt, cacao nibs, crushed nuts and a drizzle of honey.Tell us, what is your fave waffle flavour?
- cup almond meal
- 3/4 cup pumpkin puree
- 1/4 cup coconut milk
- 3 eggs
- 1 tbs honey
- 1 tsp vanilla powder
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- pinch of salt
- *Add extra sweetener or omit it, adjust it to your taste!
- Heat up your waffle machine
- Place all ingredients into a blender and blend until smooth. The batter will be nice and thick.
- Grease the waffle iron (we used coconut oil spray) and pour the batter into the waffle maker. Follow your waffle makers cooking instructions.
- Continue this process until all of the batter has been used.
- Remove, let it cool and top it with your favourite toppings! We used coconut yoghurt, crushed nuts and cacao nibs, with a drizzle of honey
