This raw choc hazelnut swirl cake is filled with nutrients and tastes totally yum! The base is sweetened with dates and paired with hazelnuts and cacao, the middle layer is a choc creamy cashew cheesecake’ swirled with a dark chocolate frosting, topped with a choc hazelnut crumble. Basically each layer is a choc hazelnut delight!

Valentines Day is coming! And so of course, we had to bring you a totally decadent, but totally healthy chocolate cake!
We are all about expressing our love through home cooking – for each other, for our family and our friends. Basically you know we LOVE you if we feed you – hehe!
They say the way to a man’s heart is through his stomach – but we say the way to ANYONE’S heart is through their stomach! You can share this with your partner, your parents, your siblings, your besties, or enjoy it on your own! We reckon its better to share the love and share the goodness of this cake with everyone! (That way you can enjoy a piece but not find yourself devouring the entire thing. It’s a sneaky way of controlling portions!)
We did whip this cake up especially for Valentines Day but we definitely think it’s great anytime just because… CAKE! Because you feel like chocolate, because its delicious, because you’re worth it! Whatever the reason behind making it, we know you will absolutely love it!

Raw cakes are the best kinds of cakes. Each bite is actually nourishing your body with healthy fats, natural sweeteners and superfoods! Here are a few ways this raw cake is nourishing you, with each nutrient dense bite!

Cacao
Cacao is full of bliss chemicals to make you .. well, blissful!
It contains anandamide and phenylethylamine that raises levels of serotonin and dopamine, which will seriously give you an instant mood lift and energy boost.
Fun fact: CACAO HAS MORE CALCIUM THAN COWS MILK! Say what?! This is 100% true! It has 40 x more antioxidants than blueberries (absorbing all those nasty free radicals), is the highest plant based source of iron and is full of magnesium (which helps give you mental clarity). It’s anti-inflammatory, reduces your blood pressure and can help reduce your risk of cardiovascular disease. Honestly, there has never been a better excuse to eat paleo chocolate!
Oh and did we mention – Raw cacao is an aphrodisiac because it contains anandamide, a substance that induces euphoria. So that is why you will find most Valentines Day desserts are chocolate based!

Hazelnuts
These little babies are a nutrient powerhouse! Hazelnuts have a high amount of vitamin E in addition to B vitamins, including folate (amazing!). The B vitamins help with your energy metabolism. while the Vitamin E plays a big part in maintaining healthy skin, hair and nails. Hazelnuts are also full of antioxdients, and are a rich source of potassium, calcium and magnesium. They have so many health benefits!
Coconut Oil
There are so many health benefits associated with coconut oil! It is one of the most healthy fats available as it contains MCT’s (medium-chain triglycerides). That means it’s easily converted into energy for the brain and the body!
It can also support your immune system, aid digestion and even boost your metabolism! Since coconut oil is so satiating, it can help control your appetite and make you feel fuller for longer.
Bottom line: you are definitely expressing your love for someone by sharing such a healthy dessert with them!

- Fruit Mince
- 1 apple (grated)
- 2 oranges (zest and juice)
- 6 medijool dates (pitted)
- 1/4 cup dried apricots
- 1/4 dried rasins
- 1/4 cup pineapple (chopped)
- 2 tbs honey
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1/2 tsp ginger
- Pie Crust Dough
- 2 cups almond meal
- 2 eggs
- 3 tbs coconut oil
- 1 tbs honey
- pinch salt
- 1 egg white beaten
- Fruit Mince
- Place all ingredients in a small saucepan on low heat.
- Leave to simmer for 25 minutes, stirring occasionally. Do not allow the mixture to boil.
- Remove from heat, allow to cool.
- Pie Crust Dough
- Mix the almond meal and salt together in a large mixing bowl Add the eggs, honey, vanilla and coconut oil
- Mix until a sticky dough forms
- Pop the dough into the fridge for 1 hour
- Take the dough out of the fridge and place between two sheets of baking paper.
- Use a rolling pin to roll the dough out to approx.5mm.
- Peel the top layer of the baking paper off
- Using a circle shaped cookie cutter, cut into circles and place the dough into your muffin tray. Press down and shape into each muffin pan, pressing the dough higher on the sides
- Poke holes into the dough using a fork to stop it the dough from rising
- Place into the oven and bake for 8 minutes or until slightly golden brown.
- Remove from the oven and spoon the fruit mince into each muffin. Flatten with the back of the spoon.
- Use a star cookie cutter to cut out star shapes with the remaining pastry. Place the star over the muffin
- Brush the egg white over the star pastry
- Place back into the oven for another 15 minutes.
- Remove and allow to cool before serving
