Winter Warmers – Good Ole’ Sticky Date
When brainstorming recipes for our Winter Warmers series, this was one of the first recipes that came to mind. We used to live in Canberra you see, and it was COLD – actually it was FREEZING. So we loved nothing more in winter than to snuggle up on a Saturday night with some Sticky date pudding. Unfortunately it was never home made – it was frozen and heated up in the microwave. Now we know it was full of sugar and processed junk
We decided to experiment and come up with our own healthy Sticky date pudding. And it worked first go – just like magic!
How you ask?
Well it comes down to a few things!The magic of a food processor – and ghee!
Have you tried ghee yet? It is clarified butter which is lactose free, and if you get the good grass fed stuff it give the most delightful caramel flavour.
Dates + ghee + food processor = magical, creamy, sticky caramel which is used in the base
Ghee + coconut milk + coconut sugar + honey = the most incredible caramel sauce to pour on top!

So there you have it – gooey, sticky, saucy sticky date pudding. It is a MUST TRY! We tested this recipe out on our friends and family and they absolutely loved it! We know you will too!
Warning: this pudding contains a fair amount of dates in it – so we recommend this be eaten as an occasional treat only!!!

Drool Worthy Healthy Sticky Date Pudding

- For the Sticky Date Base
1 Cup Medjool Dates (soaked in boiling water for at least 15 minutes)
1/2 Cup Melted Ghee (Grass-fed if possible)
3 Eggs
1/2 Cup Almond Meal
1/2 Cup Tapioca/Arrowroot Flour
1/2 Cup Coconut Milk (Canned)
1 -2 tbs Honey
1 tsp 100% Vanilla Extract
- For the Caramel Sauce:
1/2 Cup Coconut Milk (Canned)
1/4 Cup Coconut Sugar
1/4 Cup Honey (or your sweetener of choice)
2 tbs Ghee (Grass fed if possible)
Pinch of Pink Himalayan Salt
Directions
- For the Sticky Date Cake Base:
- Preheat the oven to 180 degrees
- Either line a baking dish with baking paper or grease 4 ramekin dishes
- Soak the pitted Medjool dates in a cup of boiling water for at least 15 minutes
- Place the dates and melted ghee in the food processor and blitz until it is a smooth caramel. This can take up to 5 minutes, scrape the edges down as you go.
- Add the almond meal, tapioca flour, coconut milk, eggs, honey and vanilla extract to the caramel.
- Process until the batter is smooth
- Pour into the ramekins or baking dish
- Bake for 25 minutes or until golden brown on top
- For the Caramel Sauce
- Mix the Coconut Milk, Coconut Sugar, Honey and Salt together in a small saucepan
- Slowly bring the mixture to the boil
- Once boiled, turn the heat right down and simmer for 15 minutes, stiring frequently
- Take off the heat and mix the ghee in – the ghee will melt in from the heat of the sauce
- Allow to stand for a few minutes – this will thicken the sauce right up!
- Pour the Hot Caramel over the cake base
- Serve, enjoy, lick the bowl!
Notes
- We recommend doubling the caramel sauce recipe as it is so delish, esp if you love caramel like we do!
- You can add extra honey to the cake mix if you like things super sweet
- Leave the honey out if the dates are sweet enough for you
